Unreliable. this restaurant has deteriorated badly in recent months. they are overbooking on holidays, creating waits of up to 90 minutes...with lots of intermittent promises of " just a few more minutes ", " the check is on the table " and other such amateur tactics. the food is still good value if you arrive early enough....dine too late and the tired kitchen now overcooks or undercooks. still has delicious watermelon based drinks...in the summer. the winter/spring watermelon drinks taste like the melon is from last season !!

UNRELIABLE AND ERATIC. The only " safe " time to go here is an off season week day. On a holiday or busy weekend, this restaurant is notorious for taking reservations and then making customers wait for an hour or more at the bar before seating. The trick is to eat at the bar, but bar seats are usually very hard to come by after 7:00 p.m. Also, by 9:00 p.m. the kitchen goes downhill ( not the sushi bar ) as it is undermanned.

The main attractions of this restaurant are the summertime drinks ( when fruits used are fresh---not old ) and year round bimbettes. Fine food, ambiance, and competent staff are NOT what Bamboo is all about.

Editorial Review. A rustic looking exterior belies the chic interior of this asian fusion place where sushi and lychee martinis are must tries.

Always a happenin spot. Bamboo is AWESOME. I've lived in the Hamptons for 5+ years now and theres not a better place for sushi. Thursday nights are awesome with a killer DJ, and the bartender is always on mark. Yea maybe the food is a little pricey, but give me a break, its East Hampton. If you think youre paying for fish and not real estate you are very wrong my friend.

2 summers ago Daniel Boulud revamped their menu. If that doesnt say something for their credibility I don't know what does. The portions are generous. Just make sure you leave room for the cookie-licious!

Friendly staff always has me leaving with a smile on my face. As someone who is allergic to seafood and shellfish, the kitchen is awesome at making sure I don't die. :)

Classless joint. My experience at Bamboo started with one bad episode to another. My reservation was dishonored as were reservations of other parties. The place was understaffed and staff was overworked and mistreated.

There was a fight in the restaurant which was ignored, especially by the owner. And to top it off, the food was overpriced!
